Kincardine native Chef Derek Griffiths brings 14 years of culinary experience to the Harbour Street Brasserie. A
graduate of several Humber College culinary programs in Toronto, Chef Derek completed most of his apprenticeship under
numerous chefs at the Benmiller Inn. At 23 Derek became the youngest Executive Chef to ever run the Inn's kitchen. Five
years later, Derek moved on to become the Executive Sous Chef at the Little Inn of Bayfield and returned to his roots of
traditional French cuisine under Chef Richard Fitousie and Chef Jean Jacques Dupuise.
